Fruity and herbal notes of lemongrass and dark berries with a rich and pure dark chocolate finish.* Sweetened with locally sourced organic panela (raw cane sugar) and only cacao butter is added for an exceptionally creamy texture and clean “snap.” Excellent for pairing with a spicy red wine, oatmeal stout, ripe figs and blackcurrants.

What makes this cacao ceremonial grade?
There is no official standard or certification for ceremonial grade cacao. To ensure you are getting cacao of the highest quality produced ethically and sustainably, it's important to know not only the brand, but the producer and the farmer.

Heirloom and ancestral varieties of cacao, shade grown in forest gardens like the Nacional cacao we grow
Trees cultivated by us from seed, carefully tended according to the moon cycle

How to make the perfect ceremonial cup:
Traditional Block: with a sharp knife, shave off the desired amount of cacao paste and add to hot water, or milk.
Drops: put 4 or 5 into your favorite mug, add hot water, or milk. Cover and allow the drops to melt.
Once the shaved paste or drops have melted, whisk until frothy and sweeten if desired

Unlike cacao nibs that are a by-product of industrial processing and contain debris or traces of peanut, soy, or wheat, we prepare our nibs with the same care and as we do our whole beans. Fire roasted, hand shelled and ground with a traditional molino.

Our rare ancestral Nacional varieties showcase unique flavors that are enhanced, not masked, by small amounts of raw cane sugar from the same region where our cacao grows. A naturally high fat content and only pure cacao butter added creates a superbly creamy texture and lingering soft finish.
48% minimum fat content. No oils or other emulsifiers. Pre-tempered. Can be used to seed untempered or melted chocolate. Once melted however, the couverture will need to be re-tempered to regain its snap and shine.
