In addition to farming cacao we handcraft each creation with the same care and respect we give to the land that gives so much to us. whole, natural ingredients like panela (raw cane sugar), local honey, and pure cacao butter

Bulk grade cacao or cacao from unknown or untraceable origin

inclusions with big carbon footprints (shipped long distances or grown unsustainably)

fractionated or highly processed ingredients like seed oils or white sugar

What makes this cacao ceremonial grade? 

There is no official standard or certification for ceremonial grade cacao. To ensure you are getting cacao of the highest quality produced ethically and sustainably, it's important to know not only the brand, but the producer and the farmer.

At Choco Estates, we are the farmers and producers who work with cacao every day.

To us, ceremonial grade means:

  • Heirloom and ancestral varieties of cacao, shade grown in forest gardens like the Nacional cacao we grow

  • Trees cultivated by us from seed, carefully tended according to the moon cycle

  • Seeds carefully fermented and sun dried onsite 

  • Fire roasted and hand shelled, by skilled people instead of machines

  • Stone ground, Poured, molded, and wrapped by hand 

Everyone involved in the process is treated with dignity and paid a just wage

Ceremony Collection

How to make the perfect ceremonial cup:

Traditional Block: with a sharp knife, shave off the desired amount of cacao paste and add to hot water, or milk.

Drops: put 4 or 5 into your favorite mug, add hot water, or milk. Cover and allow the drops to melt.

Once the shaved paste or drops have melted, whisk until frothy and sweeten if desired

  • Melt couverture for a silky chocolate syrup over vanilla ice cream. Use in any baking recipe that calls for cocoa powder and taste the difference

  • Use turmeric to make soothing golden milk. Add to soups, stews, curries, spice rubs and salad dressing. Or stir a small amount into hot water with a squeeze of fresh lemon to aid recovery from a cold or achy joints

What are the benefits of local and seasonal ingredients? 

  • Amaranth is a protein and fiber rich seed native to the Andes mountains

  • Pumpkin is one of the most important indigenous crops of Ecuador. The seeds are an excellent source of iron, calcium, selenium, protein, and fiber 

  • Macambo, aka “jaguar cacao” trees provide shade on our cacao farm and a crunchy, nutritious seed with an almond-like flavor 

  • A small carbon footprint and more reward for small farmers and local communities
